Anya Clive's Easy Pesto

A 'whatever you like pesto'.

I recently used the abundance of wild garlic that has been available, which led to our trying different things. It is pretty healthy and gets greens into everyone. 

2 adult handfuls of toasted pine nuts
3 stems and leaves of basil
1 handful of parsley
1 handful of spinach
1/2 an avocado
2 cloves of garlic (or 1 handful of wild garlic) 
1 handful of Parmesan cheese
1 tbsp olive oil/rapeseed oil
2 to 3 tbsp water 
salt and pepper to season

Put it all in a blender and pulse or whizz to the consistency you like. Great with pasta, but it is lovely on grilled chicken with cauliflower rice if you want to go easy on the carbs!. 


Finish off with grated Parmesan, a drizzle of oil and add whole, toasted pine nuts for extra texture. A tomato and onion salad can help to cut through the richness. 


Change it up to suit your tastes.

Elderflower Cordial

5lbs sugar
2 1/2 pints water
25 elderflower heads - I put as many as I can find at the time!
2 oz citric acid
2 sliced lemons

Bring water to the boil and then add sugar.  When sugar totally dissolved add elderflower, citric acid and lemons and leave for a couple of days stirring occasionally.


Strain through a jellybag into sterilised bottles.

'Scum' tends to rise to the top of the bottles - I usually scrape it off or just shake the bottle - it's only pollen!
